The Vegetable Broth is a meal prepared with vegetables and potatoes, for its preparation only incorporates vegetables such as carrots, broccoli, turnips, or celery, without adding meat, which makes it a super nutritious meal, and purely pure vegetable. Today, it is prepared by means of a basic recipe, and can be prepared for lunch, or many times for dinner. It is a basic and easy recipe, since the ingredients we use, will be within our reach.

Vegetable Broth (Peruvian Recipes)

Ingredients:

  • 4 lemons cut in half.
  • 4 colored potatoes cut in half.
  • A stick of celery cut in circles.
  • A medium turnip cut into small pieces.
  • 3 carrots cut in circles.
  • Broccoli cut into small pieces.
  • 500 g of soup noodles (optional).
  • Oregano to add to the soup.

Recipe procedure:

  1. Wash each ingredient, and cut in the way we want. But keeping in mind that each vegetable should have a small shape.
  2. Once this is done, add half of the water in a pot and let it boil, seasoning with salt to taste (try to give a good flavor).
  3. Before the water boils, add the vegetables that need to be cooked more, such as: carrots, potatoes, beans, and finally broccoli and celery.
  4. Once the water has boiled, add the noodles and move them from one side to the other until they are cooked.
  5. Test the flavor of our broth, and if the liquid of our broth has diminished we add a little more water to our preparation (so that this does not happen add water up to half of your pot, and according to your environment to cook prepare it).
  6. Serve on deep plates, and if we wish we can add an egg, and spread it all over the surface (the heat of the broth will make the egg cook quickly). We cut each lemon in halves to accompany it in our broth.
  7. Serve with oregano and lemon.

Note: Each vegetable has a specific cut, however you can cut it in the easiest way you can find. For example, carrots can be cut into long strips, broccoli into small cubes, and celery into small cubes.
