Olluquito con carne is a meal prepared with ollucos and beef, cooked in a skillet (using the same technique as lomo saltado). Olluco, besides providing nutrients, is very rich in flavor. Ingredients:
- ½ kg of fresh Olluco.
- ½ kg of pre-cooked beef (fillet part).
- Umami seasoning.
- Vegetable oil.
- Salt to taste.
- Pepper.
- Garlic
- Ground chili (yellow and red)
- 1-2 cups of cooked rice.
Recipe procedure.
- Wash the Ollucos, and cut into strips. The idea of this is to create different shapes of cuts, which will serve to cook them. Season with salt and aji-no-moto.
- In a separate bowl, add the pre-cooked meat, and season with salt, aji-no-moto, pepper and garlic.
- For cooking, use an oval frying pan with a contour that allows the ollucos to move. Heat the frying pan, then add oil, and after a few seconds, add the onion, together with the garlic, ground chili peppers and fry.
- Once browned, add the seasoned meat in procedure 2, and cook until it integrates with the other ingredients, then add the olluco from procedure 1 and sautƩ until they take color.
- Let it cook, and add a little water, in case it does not have juice. Test the flavor and turn it off when it is at a good point.
- Serve with rice and an onion salad.
