Ingredients for the rooster in the oven.

  • 1 whole peeled and cleaned rooster (2 kg approximately).
  • Salt to taste.
  • 3 tablespoons of ground garlic.
  • 2 spoonfuls of dry yellow panca chili bell pepper, ground.
  • 2 spoonfuls of dry red aji panca bell pepper, ground.
  • 2 tablespoons of freshly ground aji escabeche chili bell pepper.
  • 2 spoonfuls of sillao.
  • ½ glass of vinegar.
  • ½ glass of water.
  • 1 tablespoon of Sazonador ají-no-moto.
  • 3 tablespoons of pepper.
  • 3 tablespoons cumin.

  • A kitchen syringe.
  • A large bowl for macerating.
  • A wooden spoon for stirring.
  • A baking dish.
  • Surgical gloves to wear.

Recipe procedure.

Preparation of the rooster.

  1. Clean the whole rooster, and then wash it. The idea is to remove the entrails of the rooster, or buy the rooster already cleaned.
  2. Make sure that the rooster is clean, and then proceed to chop the meat of the rooster all around with a knife.
  3. In a bowl add the vinegar, water, salt to taste, pepper, cumin, ají-no-moto (for flavor), sillao, ají peppers, and ground garlic. Form a mixture, and stir with a wooden spoon, or by hand, using gloves.
  4. Use the previously macerated mixture to baste all the meat of the rooster. Add the juice of the mixture all around the cock, and use a syringe if possible, to penetrate inside.
  5. Introduce uniformly to the whole rooster, and if more mixture is missing, you can prepare more.
  6. Leave to macerate as long as possible; but it is recommended 1-2 hours to get more flavor. If possible, more time will be better; until the oven is ready.
  7. After that time, take it to the oven to be cooked (put it in a baking dish). The baking time is approximately 1-2 hours, at 180 °C.
  8. Once cooked, serve according to your preference. 
  9. It can be served with chocolate, yolk bread, paneton, and a family reunion.
Note: The rooster meat is not cut into pieces, because it should be presented whole for Christmas.
