Cauliflower au gratin is a Peruvian gastronomic dish, and one of the least known dishes by people. The way to prepare it consists of cooking ingredients that we can locally; and it has a fairly easy procedure. If it is the first time you prepare the food, we will love it.

Cauliflower au gratin.

Ingredients.

  • 1 tender cauliflower.
  •  3 tablespoons margarine.
  • 6 tablespoons of plain flour.
  • 3 cups of milk.
  • Nutmeg.
  • 3 beaten eggs.
  • ½ cup Parmesan cheese.
  • 1 tablespoon chopped parsley.
  • salt.
  • Pepper.

Recipe procedure.

  1. Boil the cauliflower in water, with pieces of bread and salt. Once cooked, drain and then cut into florets. 
  2. In a saucepan, melt the margarine, then add the flour, when it has a texture, turn off the heat and add the hot milk.
  3. Season with salt, pepper, nutmeg, and bring back to the fire, until it boils for a minute. Remove from the heat and add the eggs.
  4. In a greased dish, arrange the cauliflower florets, sprinkle with parsley, and then pour over the sauce prepared in procedure 3. Finally, sprinkle with Parmesan cheese, and bake in the oven at 200 degrees Celsius (400 degrees Fahrenheit) for 10 minutes.
