The yellow potato is a tuber of the 150 varieties that exist in the world; its scientific name is "Solanum Gonicalix" and it grows between 3200 and 4000 m.a.s.l., due to the climatic conditions and soil it grows mainly in the Peruvian Andes (Andean mountain range). The Huanuco region is the most important land in producing the yellow potato (called Tumbay). The potato is composed of amino acids, and minerals such as phosphorus, iron and calcium.
