Guisado de papas, or also called "guiso de carne", is a homemade meal, prepared with stewed potatoes and meat. It is considered a Creole recipe, where any type of meat can be used, and it is very easy to prepare. In Peru, this recipe is mainly prepared at home, and its commercial sale is very limited, its flavor is purely Creole!

Guisado de papa (Peruvian recipe)

Ingredients:

  • 1/2 kg yellow potato.
  • 1/4 kg of peeled peas.
  • 500 g of meat (this can be chicken, beef or pork).
  • 3 fresh carrots cut in small squares.
  • 10 g of yellow chili bell pepper.
  • 10 g of red chili bell pepper.
  • Salt.

Procedure of the stew.

  1. In a medium saucepan, add "10 ml of vegetable oil" and 30 g of ground garlic. Let it brown for 20 seconds.
  2. After the foreseen time, carefully add the red and yellow chili, and with the help of a spoon move slightly from one side to the other.
  3. Add 10 ml of water and let stand. With a knife chop the carrot and the potato making cuts in the form of small squares.
  4. Do not forget to add the "peeled peas" and the chopped meat in squares (it can also be done in a free form).
  5. After all the steps; season with salt to taste, and taste the flavor.
  6. Finish when the stew is ready. This should denote a golden yellow color (as in the photo).
  7. Serve as a stew with cooked rice. Do not forget to prepare some natural juice.
