Ingredients:

  • A bag of bread (this can be French bread, or whatever you have).
  • One kilo of pork, cut into medium-sized cuts.
  • Umami seasoning (in Peru known as Ají-no-moto).
  • Vegetable oil.
  • Cumin.
  • Pepper.
  • Salt to taste.

Procedure of the recipe.

  1. On our chopping board, we arrange the pork meat and cut it into medium-sized pieces, which we will use for frying.
  2. Once cut, we season in a bowl, and add: cumin, pepper, a pinch of ground garlic, Umami seasoning, and salt to taste. We let it rest, and with a spoon we move it from one side to the other, until it takes consistency, and everything is well macerated.
  3. While this happens; we heat the oil in our frying pan, and add a few pinches of salt.
  4. Make sure that the oil is very hot, and fry each pork prey, until a dark golden color is formed (as in the photo).
  5. Observe that the texture is well cooked, and turn every time you need to do it (this is done so that the meat is fried on both sides), then we separate it on a bowl and drain the oil that is left over.
  6. Once ready, mix with onion salad and serve with bread, accompanied by coffee.

Note: Acquire fresh pork meat that does not contain fatty parts; if possible, acquire only pulp. The bread should be of medium size.
