Mondongo is a classic soup of Peruvian gastronomy, and it is prepared in many ways. It comes exclusively from the Junin region, and is prepared with peeled white corn, beef and pork. If this is the first time you are going to prepare this meal, we are sure you are going to love it.

 Mondongo Soup (Peruvian recipes).

Ingredients:

  • 300 grams of peeled white corn.
  • ½ kg of beef.
  • Half a kilo of pork.
  • ½ kg of beef belly and leg.
  • One Chinese onion cut into small cubes.
  • Parsley sprigs.
  • Sprigs of Chinese onion.
  • 1 rocoto cut in slices.


Procedure of the recipe.

  1. In a pot with water, submerge the peeled white corn, which serves to balance its rapid cooking. This is done a day before the preparation.
  2. On a large pot, add the peeled corn, together with the meats. Cook until the corn pops and the meats are evenly cooked. This procedure usually lasts between 5 to 6 hours.
  3. Then the meats are removed, cut into small pieces, and served with the broth and the peeled corn, which is already popped and cooked, which is called mote.
  4. Garnish on top of each soup with parsley, Chinese onion and rocoto. Finally, allow each diner to add salt to taste over their dishes.
  5. In other preparations, it can be observed that the mondongo is accompanied by slices of lemons; therefore, if you have lemons within your reach, you can taste this meal with lemon juice.

Note: This meal is prepared in a wood stove, since the cooking time usually lasts between 5 to 6 hours. If you opt for a gas stove, you should keep in mind that the cooking time will consume a high percentage of your gas.
