Chicharr贸n de chancho (Peruvian recipes).

Ingredients:

  • 1000 grams of pork cut into medium-sized cuts.
  • ½ kg of parboiled sweet potato, cut in halves.
  • 3 medium onions, cut for salad.
  • 3 to 4 tablespoons of salt or to taste.
  • 2 lettuce leaves, washed.
  • 473 ml vegetable oil.
  • 45 grams of ground garlic.
  • 40 grams of cumin.
  • 40 grams of pepper


Recipe procedure.

  1. Cut the beef into small cubes, and then wash them well. Let it rest.
  2. On the bowl, add a teaspoon of ground garlic, and then season with cumin, pepper, and salt to taste.
  3. Leave to macerate for five minutes, and move with a spoon from one side to the other. During this time proceed to heat the oil in a frying pan.
  4. Once the oil is hot, proceed to fry the pork prey, and let it fry until it gets a golden color.
  5. Set aside on a separate dish and let cool. Serve immediately with onion salad, sweet potato slices and a cup of coffee.
