Beans are legumes recommended by the World Health Organization, and because of their high nutritional value, they are very common in our meals. To obtain more protein and iron, it is advisable to consume between 9 kg of vegetable stews for each family. Remember that proteins and iron are essential for the growth and development of human beings.

Menestra Partida Stew (Peruvian recipes)

Ingredients:

  • 2 cups of split peas.
  • 2 red onions.
  • 3 cloves of garlic.
  • 3 tablespoons of tomato paste.
  • 2 tablespoons of paprika powder.
  • Salt to taste.
  • Pepper to taste.
  • 2 cups of pork skin.
  • 1 tablespoon oregano.
  • ¼ cup of oil.
  • 1 cup vegetable stock.
  • 1 dash of olive oil.
  • ¾ kg of fresh cheese.
  • Cooked rice to accompany.

Recipe procedure.

  1. Soak the stew the night before, the day of the preparation.
  2. In a pot with water, add the stew and cook over normal heat. Once cooked, set aside.
  3. In a frying pan, make a dressing with onion, oil and garlic, let it fry, and then add the pork skin, tomato paste, paprika and oregano not rubbed.
  4. In the vegetable stock pot, from procedure 2, add the vegetable stock from procedure 3, and let it cook until the preparation is ready and consistent.
  5. Serve adding cubes of fresh cheese, olive oil, and can be accompanied with grained rice.

Green split peas, ingredient.

Note: The green split peas should be soaked one day before, after cooking. This is done because it allows the cooking to be more uniform and faster.
