A great Peruvian Creole dish.

The Frijolada de pato, is a typical Peruvian food with a pleasant flavor, and unique in its preparation; to obtain a good result, it is necessary to choose duck meat that is tender, and raised in a farmyard, since being homemade or from home, the meat is richer and softer. As a general rule, this type of food is cooked in firewood, and is part of the variety of Creole dishes that Peru has. It is known for its northern preparation, and the use of homemade ingredients that all good Peruvian food has. The flavor is unforgettable!

Frijolada de pato (Peruvian recipes)

Ingredients:

  • 1 kg of duck meat cut into prey (fresh and tender).
  • ½ half of head onion chopped in small dices.
  • 1 branch of coriander chopped chifonada style.
  • 1 chopped leaf onion.
  • 4 tablespoons of aji amarillo chili bell pepper.
  • 4 tablespoons of ground garlic.
  • 4 tablespoons of fresh red bell pepper.
  • 2 cups and a half (500 ml) of vinegar.
  • 2 cups (473. 18 ml) vegetable oil.
  • 1 teaspoon pepper.
  • 1 teaspoon cumin.
  • 1 tablespoon (15 g) salt or to taste.


Recipe procedure.

  1. On a medium size and comfortable dish; add the duck prey, and then carefully add the yellow and red chili.
  2. Then add the freshly ground garlic, and move lightly with your hands from one side to the other, to make it take consistency, so that we can macerate it.
  3. After that, add salt to taste, vinegar, and season with Umami seasoning, pepper and cumin (these last two ingredients are optional).
  4. Let it macerate for the whole time foreseen. But for this case the duration of our maceration will be at least one hour.
  5. After the time, add the coriander and the two chopped onions.
  6. On a pot, make a basic dressing between garlic, chili peppers and oil, then add the duck prey already macerated, observing from time to time, letting it cook.
  7. Finish when the meat has a dark golden color (as in the photo).  Serve with beans and rice.
