Chilcano de Camarones (Peruvian recipes).

Ingredients:

  • A dozen medium shrimp, and clean.
  • 2 dozen shrimp tails that are clean and peeled.
  • One tablespoon of oil.
  • Half cup of chopped Chinese onion.
  • A quarter cup of diced red onion.
  • 8 cups of fish broth.
  • Juice of 2 lemons.
  • One tablespoon of chopped parsley.
  • One tablespoon of fine coriander.
  • One tablespoon of chopped mint.
  • Salt to taste.

Preparation of the recipe:

  1. Lift each shrimp's head shell, to remove the little black bag it has, and the yellow coral. This can be done with a stick or with the tip of a knife.
  2. Heat oil in a pot and fry the chopped red onion. When it becomes transparent, add the fish broth. Then add the previously washed shrimp, the peeled tails, and cook for 10 minutes.
  3. Finally, add the chopped parsley, cilantro, Chinese onion, mint, salt to taste, and lemon juice.
  4. We can serve this chilcano as we like.
