Chilcano de Choros (Peruvian recipes)

Ingredients:

  • 4 dozen choros.
  •  One medium pore finely chopped.
  •  One tablespoon of chopped parsley.
  •  Lemon juice.
  •  Half cup of chopped Chinese onion.
  •  Salt to taste.
  •  Umami seasoning.

Recipe procedure:

  1. Wash the mussels and let them soak for 2-4 minutes.
  2. In a pot, boil the mussels with the pore, over low heat.
  3. Wait for the shells of the mussels to open, in approximately one hour.
  4. Finally, add to the broth the chopped parsley, chopped Chinese onion, salt to taste, lemon juice and season with umami.
