Ingredients:
- ½ cup oil.
- ½ cup of chopped onion.
- 3 green chili peppers ground with two cloves of garlic.
- 5 ground mirasol peppers.
- ½ kilo of parboiled tripe and finally chopped.
- 1 sprig of mint.
- ¼ cup evaporated milk.
- 6 slices of sliced bread.
- ½ cup of Parmesan cheese.
- ¼ cup water.
- Boiled potatoes.
- Hard boiled eggs.
- Salt.
- Pepper to taste.
Recipe procedure:
- Soak the bread in milk, water and blend.
- Heat the oil in a pot, brown the onion, ground chili, salt, pepper and garlic, when the dressing is cooked, add the bread, double broth, cheese and the good herbs, stirring well until it cooks, then add the tripe.
- It is served with potatoes, eggs and olives.
