The Peruvian tamale is a typical food of the Peruvian cuisine. The preparation of this food is difficult, and it is cooked with local ingredients. To prepare this food, you should have basic knowledge. Generally, a wood stove is used to cook it. It is accompanied with an onion salad and coffee.

Ingredients.

  • 1 kg of ground mote (for 10 tamales).
  • ½ kg (500 g) of chicken meat, cut into small pieces.

  • ¼ of fresh escabeche (cut in long strips).
  • Green banana leaves, and piola to tie.
  • 4 boiled eggs, and cut in halves.
  • 40 grams of ground red chili (or aji panca).
  • 40 grams of yellow chili (or aji panca).
  • 20 grams of freshly ground garlic.
  • ¼ of fresh olive.
  • Vegetable oil.
  • White vinegar.
  • Salt.

Recipe procedure.

  1. With the help of the hand mill, proceed to grind the mote until it becomes a dough. But before it; to have left it soaking one day before in water.
  2. Then on a pot; quickly make a dressing, adding oil, garlic and the aji panca bell pepper. Let it get ready.

  4. With a wooden spoon, start moving from one side to the other, without allowing the dough to stick to the pot. For this, it is necessary to add a lot of oil.
  5. Finish; when the mote is done, a uniform and consistent dough; ready and creamy yellow in color. Then, arrange the plantain leaves, to start with the wrapping.
  6. But before; prepare another dressing by adding oil (just a little), 2 tablespoons of ground garlic, aji panca, and fry the dressing until it is ready.
  7. Once ready, add the pickles, cut into small strips, and season with salt and Umami. And lastly add the chicken pieces.
  8. Now, on a banana leaf add a quantity of mote dough, and arrange it in the desired shape. Do not forget to add a small amount of prepared dressing.
  9. Accompany it with olives and egg, tie it with a "banana ratchet" (or use a "piola"). Until the obtained quantity is formed.
  10. Then over a pot, with boiled water put the tamales to cook, and leave for an hour. Serve with onion salad and hot bell pepper (as in the photo).

Note: When we talk about mote; it basically refers to shelled and cooked corn, which must be soaked one day before its preparation. This is done, so that the mote pops quickly. Boiled egg is also added, but keep in mind that it is not suitable for storage.
