Semolina soup is a meal that you can prepare as an accompaniment to your favourite meals, and is a much better way to enjoy lunch. It is quick to cook, and requires minimal time to make. Usually, this food is prepared in the regions of Peru that are very deep, but it has also been observed in other places on the coast, and in the jungle. Let's see how to prepare it!

Ingredients for semolina soup.

  • Small noodles (use noodles that are small).
  • ¼ of semolina (only half the amount).
  • Yellow potato, cut in half.
  • Freshly ground garlic (2 tablespoons).
  • 01 grated carrot.
  • Grated pumpkin.
  • Vegetable oil.
  • No moto chilli.
  • Oregano.
  • 02 eggs.

Recipe procedure.

  1. In a saucepan, add a small amount of oil and season with fresh garlic.
  2. With a spoon move from one side to the other, until a good dressing is formed. Add the pumpkin and carrot (these should be previously grated).
  3. Then add the water and bring to the boil. When it starts to heat up, add the semolina and with the help of a spoon move it from one side to the other, without it sticking.
  4. In this step, we take the opportunity to add salt to taste to enhance the flavour.
  5. After a set time, add the noodles (these should be small) and the potatoes cut in half.
  6. And finally, let it cook at a normal temperature. But stir with a spoon so that it does not stick.
  7. Almost at the end, add the eggs, and spread them all over the surface of the soup, and turn it off.
  8. Season with oregano and aji no moto. Serve in soup bowls, and serve with lemon wedges.
  9. Enjoy a good soup!

Note: The amount of water to use, and the ingredients, depends on the number of people you are cooking for. To do so, just double or calculate the amount of ingredients you can use for the preparation of the soup. For this case, the amount of water is up to half.

It comes from the Italian semola, and this from the Latin simÄ­la 'the flower of flour'. It is defined as: wheat with its husk removed.
