Tallarín saltado is a Peruvian home-cooked meal, prepared mainly at home. It is considered home-cooked because it contains ingredients within our reach and by nature its preparation is "economical". The way to prepare it is by adding a basic dressing and sautéing it in a frying pan, so if you are looking for a way to surprise your family or friends, we recommend this recipe. Ingredients for the sautéed tagliatelle.

  • 1/2 kg of thin noodles.
  • 1/2 kg of chicken meat, cut into pieces.
  • red chilli
  • Yellow chilli.
  • Ground garlic (fresh).
  • Umami seasoning.

Recipe procedure.

  1. In a medium, comfortable pot, add half of the water and bring to the boil. Season with salt to taste.
  2. When the water starts to boil, add the ½ k of tagliatelle and cook at normal temperature.
  3. Cool the tagliatelle and leave to cool for 5 minutes.
  4. Within the same period of time, make a basic dressing by adding vegetable oil, 20 g of red chilli, yellow chilli, and freshly ground garlic in a separate pot.
  5. Carefully stir the dressing back and forth with a spoon and add the chicken pieces.
  6. Allow to cook until done and during the process add water (when the stew dries out) and watch carefully.
  7. After the chicken pieces are cooked; separate the chicken pieces and add over the same dressing to the tagliatelle and stir back and forth until the stew sticks to the tagliatelle and is golden brown (as in the photo).
  8. Serve and serve with a freshly squeezed juice.

Note: This stew can be made in a frying pan for more convenience, as there is no frying pan, any pan can be used.
