Ingredients:

  • Mint leaves (these should be fresh and with a good aroma).
  • 1 kg of tripe (especially kid).
  • 20 g of red chili bell pepper (or known as "aji rojo").
  • 20 g of aji-no-moto (this should be to taste).
  • Prepared fresh yellow chili bell pepper.
  • 3 spoonfuls of Chicha de jora.
  • 20 grams of ground aji escabeche chili.
  • 1 kg of colored potato.
  • Vegetable oil.

Procedure of the recipe.

  1. Boil the tripe in water. Peel the potato and cut it in small squares; and when it is pre-cooked, take it out of the pot and chop it.
  2. Season with cumin, pepper and salt to taste. Then add chicha de jora (three to four spoonfuls).
  3. On a separate pot is seasoned with oil, adding freshly ground garlic, aji amarillo, aji colorado (also known as "aji rojo"), and prepare a dressing. Then add the mondongos with a little water.
  4. We let it cook previously, and when the potatoes are well cooked we add the "precooked blood" (this has been done before). And next to it we add the mint leaves.
  5. Serve properly and accompany with yuccas and a fruit soda. Enjoy a good meal!

Note: In step four; "precooked blood" is mentioned as an ingredient to flavor our food, but this may be optional for many people. The use of this ingredient is up to you.
