Peruvian Mazamorra is a dessert prepared to be sold in public places, and in many occasions, in parties or birthdays. Its preparation consists of preparing purple corn, pineapple cut into small pieces and sugar. It is also usually accompanied by raisins, to give it a more pleasant flavor. This dessert is similar to rice pudding, or arroz zambito.

Mazamorra morada (Peruvian recipes)

Ingredients:

  • 1 whole pineapple but cut into small cubes.
  • ½ kg of sugar (it can be blonde or white).
  • 1 kg of fresh and healthy purple corn.
  • 1 quince cut into small pieces.
  • 1 bag of fresh raisins.
  • 1 bag of cloves.
  • ½ kg of Israel apple.
  • 1 sachet of chili pepper.
  • 1-3 cinnamon sticks.
  • ¼ of chuño.

Procedure of the recipe.

  1. In a pot, boil the purple corn, the pineapple, the quince and the apple. All cut into small cubes (only the fruits).
  2. Once the corn is boiled and cooked, it is passed through a strainer to strain the organic remains that are left over.
  3. Then, in a pot (this pot will be where the mazamorra will be cooked), add 4-6 spoonfuls of sugar and let it become liquid. So that we can "confit" the pieces of fruit that we have previously cooked, and let it fry for a good flavor grip.
  4. For this, you must be careful not to burn it.
  5. Once the sugar and the fruit pieces are confit, add the juice of the purple corn (which has been previously strained). But taking into account to leave a little of this, to dissolve the chuño.
  6. Once the water is boiled, add the chuño with the purple corn juice left over from step five, and move it with a spoon from one side to the other. Stir until it forms a thick and rich dough.
  7. Once ready, we serve it in small bowls and accompany it with cinnamon, cloves, raisins and cherries.

Note: Candying is a technique used to enhance the flavor and give a good taste to the dessert we are cooking. In this case, the mazamorra morada. Covering the fruits or seeds with a sugar bath to make them more palatable.
