Chupe de camarones (Peruvian recipes)

The Chupe de camarones, or rarely called "shrimp soup", is a meal prepared with shrimp tails, and other ingredients that make this soup very unique, such as chopped Chinese onion and parsley in chifonada. In addition, the way of cooking it varies from each person who prepares it, and the ingredients usually change, and this in fact is due to the place where we are living. In this recipe we will prepare a basic chupe.

Ingredients:

  • 6 medium size shrimp.
  •  6 shrimp tails.
  •  Half a cup of chopped Chinese onion.
  •  Quarter cup of chopped red onion.
  •  4 cups of fish broth.
  •  Chopped parsley.
  •  Fresh coriander leaves.
  •  Chopped mint in chiffonade.
  •  One cup of vegetable oil.
  •  Salt to taste.

Recipe procedure.

  1. On a chopping board, we begin to wash each shrimp and make sure they are well cleaned. This way we remove the "black bag" and the coral that is under its head.
  2. Now, heat vegetable oil in a medium saucepan and let it fry. Then add the chopped red onion and let it become soft, and immediately add the fish broth, remember that this last ingredient is optional and add water to give it more flavor.
  3. Add the washed shrimp and the tails. And leave for 10 minutes. And then add the chopped parsley, cilantro, Chinese onion, mint, salt and lemon juice.
  4. Let it cook until done, and serve it on bowls (or follow the example of the recipe photo). Finally, serve it with lemon slices and salsa criolla.
  5. Remember to put in this meal the secret ingredient. Whose input is love and share it with the people you admire and love the most.

Note: The coral is found at the bottom of the shrimp's head (just pull it out and you will find it). And it is yellow in color.


Definitions of terms.

The word shrimp comes from the aug. of cámaro. And it is defined as: Decapod crustacean, macrurous, three to four centimeters long, similar to a tiny shrimp, brownish in color and edible.
