Arroz con leche (Peruvian recipes)

The excellent rice pudding.

Rice pudding is a rich dessert made with rice, cinnamon, and milk. It is prepared for any occasion and is the most popular dessert that most of us know. Nowadays, its preparation is exclusively for sale and it can be purchased in places that sell desserts or are bakeries. In addition, there are a small number of people who prepare it for birthday parties or any children's party. It is usually accompanied by mazamorra morada or the famous zambito rice. In the end, its rich flavor comes from the ingredients that are added to it.

Ingredients for rice pudding.

  • 820 ml (2 cans) of evaporated milk or milk purchased from a dairy.
  • ¼ k (250 g) of white or blonde sugar.
  • 8-10 raisins to accompany dessert.
  •  ½ k (500 g) white rice.
  • 3 cups (236.59 ml) of water.
  • 1 tablespoon of ground cinnamon (to decorate dessert).
  • 2 whole cinnamon pods.
  • 2-3 cloves.
  • 1 cup of shredded coconut.
  • 1 fresh orange peel (this is optional).

Recipe procedure.

  1.  Prepare a medium size pot and add 410 ml of milk that you have purchased. And let it heat but not boil (we leave it at a normal temperature cooking).
  2.   Once our milk is hot and about to boil. We add the 500 grams of rice to cook it together with the milk. And add the cinnamon pods, the cloves and the orange peel (remember that this can be optional).
  3.  We let it cook until it forms a consistent mass, and the rice has burst (that is to say the rice has to have been cooked to its point).
  4. Then we add the other quantity of milk, and let it cook. But adding the sugar and give a rich flavor (remember that the sugar must be calculated and for this recipe we use ½ cup of it (118.295 g)). And finally the raisins.
  5.  Let it cook at normal temperature. And take care that everything is at its point and that the milk has not boiled completely (this point is very important since our dessert should not be too dry but in the perfect conditions).
  6.  Serve in cups and decorate with ground cinnamon. If we wish we can add grated coconut to represent it even more. Or you can observe the decoration in the photo of this recipe. 

Note: When adding sugar to our dessert, the orange peel must be removed and previously taken out of our preparation. This action is important if you have used an orange peel for your final dessert.
