Ingredients for Ají de Pescado.

  • 7 loaves of bread from one or two days before
  • 1 kg of fish suco
  • ¼ of freshly ground aji escabeche chili pepper
  • ¼ kg of onion head
  • 1 head of garlic
  • 1 sachet of sibarita.
  • Pepper, cumin and salt to taste.

Recipe procedure.

  1.  We proceed to debone the fish, wash with plenty of water.
  2.  Then place in a pot with water to boil for about 5 minutes.
  3.  Afterwards, we shred the parboiled fish.
  4.  On the other hand, tear the bread into pieces, and soak it in boiling water, so that it covers the whole amount of bread.
  5.  Separately, in a pot, we will fry the onion cut into small squares with oil, add the pickled chilli, the crushed garlic, sibarita, pepper, cumin and salt to taste.
  6.  Then add the soaked bread, turn it over and wait for it to cook for 5 to 8 minutes.
  7.  After this time, add the fish. If we see that there is not enough water, add boiled water in such a way that it allows the fish to cook and is not too soupy.
  8.  Leave to cook for 10 to 15 minutes, making sure that the mixture does not burn.
  9.  We can serve it with boiled potatoes, or with white rice, according to personal preference.
