Choros a la Chalaca

Recipe prepared with seafood.

Today we have a recipe to prepare our meals based on fish and seafood; today's preparation has to do directly with a very special and nutritious seafood; it is the "mussels" or popularly known as: choros. In this recipe we are going to prepare a meal with these seafood and we are going to obtain a preparation to enjoy with all the family and friends. Let's see how to prepare it!

Choros a la Chalaca

Recipe ingredients.

  • 2 dozen choros.
  • 2 onions cut into cubes.
  • ½ small rocoto pepper, without seeds or veins and cut into cubes.
  • 6 lemons.
  • 1 tablespoon of ground yellow chili bell pepper.
  • 1 teaspoon of vegetable oil.
  • 1 parboiled and husked corn.
  • Chopped parsley to taste.
  • Salt.
  • Pepper.

Procedure of the recipe.

  1. Clean the mussels rubbing well the shells with a brush under the pipe. And place them in a pot with a liter of boiling water and a teaspoon of salt.
  2. When the mussels are cooked, remove the mussels that have not opened and discard.
  3. Obtain the vulva of each mussel and place them on a separate dish.
  4. Mix in a bowl the onion, rocoto, shelled corn, juice of four lemons, aji amarillo, vegetable oil, salt and pepper to taste.
  5. Add the mussels and mix; place them on the shells arranged in the dish and squeeze the rest of the lemons on top when serving.

Note: Wash each mussel very well with water and choose the ones that are healthy and in good condition.
