Caldo de pollo (Peruvian recipes)

Caldo de pollo is a very popular food in Peru and all over the world because of the ingredients it contains, and how peculiar it is. Depending on the place where we are, this soup can be prepared in many ways, and the ingredients that it presents could vary, since in many cases a whole set of vegetables is added to make it stand out, and be more nutritious, it is accompanied by chicken prey (for that reason the name comes from), and yellow potato which gives a good combination, and makes it richer. Nowadays it is prepared with a basic procedure, and it is frequently prepared by many households as part of a family recipe. This meal can be served for breakfast and lunch.

Caldo de pollo (Peruvian recipes)

Ingredients:

  • 1 kg of chicken meat (cut into medium-sized pieces).
  • Chopped Chinese onion (to add as a salad).
  • 4 yellow potatoes (ready and peeled for boiling).
  • 1 piece of carrot cut in circles.
  • 1 piece of pumpkin in pulp.
  • ¼ of thin noodle noodle.
  • 1 handful of cilantro.
  • 1 piece of broccoli.
  • Oregano.

Recipe procedure.

  1. With the help of a knife cut the chicken meat into pieces and wash them well (the amount of pieces you can take out will depend on your cooking environment). To then reserve it inside a container or bowls. And on a separate space (in our kitchen), choose a medium pot and add water up to half of it; so that we can boil it and add the following ingredients.
  2. We add: salt to taste and stir it together with the water (stir it, and once ready taste the flavor), then we add the chicken prey, the potatoes cut in small pieces, the noodles and the vegetables you have selected (the carrot, the broccoli, and the pumpkin each one cut in the most comfortable way to be done).
  3. Once ready all our inputs, let cook, and cover the pot where we are cooking (cook it at a medium temperature).
  4. We tolerate the time, and we observe that everything is well cooked; and we remove it from the fire and let it cool a little, and then serve it on deep plates and accompany it with Chinese onion, chopped in small squares.
  5. Serve and enjoy with the family. Do not forget to decorate the way you want or check the photo to make it your guide.

Note: Do not only limit yourself to the consumption of some vegetables, if you have more of them, add them to your broth. For example, a piece of yucca or turnip.
