The aji de choros, is a typical Peruvian food. Today we are going to prepare an aji de choros in a quick and simple way, with a procedure that is easy to understand, if it is the first time you are going to prepare this food, it will be delicious.

Ingredients:
- Half a cup of oil.
- ½ cup of onion (chopped).
- One teaspoon of garlic (minced).
- Ground chili to taste.
- 2 dozens of clean and cooked choros.
- 2 French breads soaked in the water of the choros.
- A cup of evaporated milk.
- 6 yellow potatoes.
- 3 tablespoons of Parmesan cheese (grated).
- 3 hard-boiled eggs (cut in halves).
Recipe procedure.
- Heat the oil in a saucepan and fry the onion, garlic, chili, salt and pepper. When the dressing is well cooked, add the blended or strained bread.
- Simmer over low heat until it is ready. Add the choros, milk, and Parmesan cheese.
- Serve on a platter, sprinkling with chopped parsley and hard-boiled egg slices.
