Ingredients of the eggplant omelette.

  • A green chili pepper or rocoto.
  • A tomato barceló, or common.
  • 2 tablespoons wheat flour.
  • 2 eggs.
  • 2 fresh aubergines.
  • A bunch of coriander.
  • 2 tablespoons vegetable or olive oil.
  • Salt to taste.

Recipe procedure.

  1. Apply the rules of hygiene and wash every single ingredient well.
  2. Cut each aubergine in small pieces, and with all the skin.
  3. On a frying pan, add a little oil, and let the aubergine soften.
  4. On a separate bowl, add the wheat flour, eggs, and other ingredients. Beat until it forms a uniform texture.
  5. Add the aubergines to this mixture, and fry in the form of an omelette. Brown on both sides, and do not allow to burn.
