Ingredients of the recipe.
- 5 medium-sized potatoes, peeled.
- Olive oil, super recommended.
- A medium onion, chopped into small dice.
- A small, grated shoe in a grater.
- A cup and a half of red peppers, cut into small dice.
- 5 medium mushrooms.
- 3 beaten eggs.
- 5 egg whites beaten.
- Pepper.
- 3 ounces cheese (you can choose the most common cheese from your country), or low-fat Mozzarella cheese.
Recipe procedure.
- The first step is to apply hygiene rules and wash each food well; especially if we’re going to cook these foods.
- Heat the oven to a temperature of 375 F (190 C); and let warm up. Meanwhile, in a separate pot, bring the potatoes to a boil, and let them cook.
- Over a frying pan, add olive oil and heat over medium heat. There, add the chopped onion into small dice, and add the vegetables until soft. With this step, we are simply making a small dressing.
- In a medium bowl, lightly whisk the eggs and egg whites, add the
- pepper, garlic salt and low-fat mozzarella cheese. Add the egg-and-cheese mixture to the cooked vegetables.
- Drizzle vegetable oil in a 10-inch baking saucepan or in a pan that can be baked and pour the egg-and-cheese mixture into it.
- Spread the low-fat Parmesan cheese over the top and bake the tortilla until firm and golden on the surface for 10 to 30 minutes.
- Remove the tortilla from the oven, leave to cool for 10 minutes and cut into five pieces.
- Accompany a fruit juice, and if desired; make this sugar-free juice.
Note. You can choose between using, olive oil, or common vegetable oil; there are many countries where olive oil is not usually available to many people; and therefore, it’s hard to use. If it is for your health, we recommend that you use olive oil.
