Huacatay cream, also known as ‘chilche’, ‘ají huacatay’ o ‘huacatay sauce’, is a tasty cream prepared with love. The preparation starts with the mincing of the huacatay leaves, which is mixed with many ingredients: rocoto, ajíes, cookies, and onions. The huacatay mixture ends in a green color mixture used to accompany any other dish we want. Although, this cream is used to accompany other main dishes like pollada and parrillada,it also allows this ones to highlight their tastes. Let’s see how to prepare it!

Ingredients of the recipe.

  • 1 lb. of fresh huacatay leaves.
  • 1 medium size rocoto (a green color one).
  • 1 pack of soda crackers.
  • ½ cup of vegetable oil.
  • ½ cup of fresh milk.
  • 1 piece of fresh cheese (4.5 oz. approximately).
  • Salt.

Preparation of the recipe.

Time needed: 1 hour.

  2. Stir-fry the Peruvian Huacatay.
  3. Stir-fry the huacatay leaves and the green color rocoto in a pan (using little oil). This will give it some better taste when blending the cream.
  4. Prepare the blender.
  5. In a medium size bowl and prepare the blender.In the blender, put the cheese, 4 cookies, 2 teaspoons of milk (this quantity is not precise). Blender until you get a thick green cream (30 seconds).
  6. Taste the cream flavor.
  7. After this time, taste the cream flavor and the texture. If anything is missing, try by adding some cookies or come little milk and some huacatay leaves.
  8. Season with a little salt.
  9. Season with a little salt and blender everything to get the cream ready.
  10. Served in family.
  11. It can be served in any kind of food, but it’s traditionally used to accompany polladas and parrilladas.
  12. Decorate very well.
  13. Serve it in small bowls and decorate it with come coriander leaves (just like in the photo).
Note: The huacatay cream can be spicy, or not, depending on how much rocoto you use and how spicy is the rocoto you´ve chosen.
