Caldo de gallina (Hen soup)

A spectacular broth.

Caldo de gallina is a typical Peruvian food prepared with noodles, potatoes and chicken prey. It is a special broth because it incorporates ingredients that make it unique and tasty; its preparation consists of cooking chicken prey, and it is accompanied by noodles, potato chips, and served with an egg so that the flavor is richer. Finally, chopped onion is added and lemon drops are added (the lemon is cut in half). The result will be an exquisite broth. Let’s see how to prepare it!

Ingredients of Gallina, Hen Soup.

  • 2,2 lb. of hen meat cut in big pieces (choose a young hen).
  • 2 green onions cut in small slices (Chiffonade).
  • ½ lb. of yellow potato cut in half.
  • Ginger cut in small slices.
  • 1 celery cut in small slices.
  • 1 lb. of noodles.
  • 4 eggs.
  • Umami seasoning (known in Peru as Aji-no-moto).
  • Oregano.
  • Salt.

Procedure of recipe.

  1. Time needed: 1 hour.
  2. Procedure of the Hen Soup (In Spanish “Caldo de Gallina”). Follow the next steps
  3. Fill half a pot.
  4. Fill half a pot with water and warm. Season with salt to taste.While the water warms to boil, add the pieces of hen, noodles, celery and potatoes (peeled, cut and washed) to the pot.
  5. Add the eggs.
  6. Cook over a medium heat and cover the pot. Watch out the process.Add the eggs (clean) and the ginger to boil.
  7. Taste the soup.
  8. Taste the soup, season with oregano and serve in deep plates (see recipe photo).
  9. Eat accompanied with onion.
  10. Eat accompanied with green onion and a hen egg in each plate.
Note: One way of accompanying the soup is to eat it with wholegrain bread. You would like it!
