An ancient soft drink.

Chicha morada is a natural soft drink prepared from purple corn and accompanied by "lemon drops". It is a refreshment with a pleasant taste, because it can be combined with other foods and meals, which makes it an even more delicious refreshment. The way to prepare it is to boil purple corn in such a way that the "purple pigment" of each corn can be used to prepare the soft drink, and obtain a natural juice. Nowadays, it is served with ice cubes, and can be served with any meal.

Ingredients for chicha.

  • 1 kg of purple corn.
  • ½ cup blonde or white sugar.
  • 1 green apple cut in halves.
  • 1 small quince chopped in small pieces.
  • 1 piece of pineapple (or pineapple peel).
  • 1 liter of water.
  • 2 lemons cut in half.

Recipe procedure.

  1.  Soak the whole corn in a bowl with water to eliminate the waste (hygiene is very important in this as in all our recipes).
  2.  Once washed, put the corn in a medium saucepan and fill it halfway with water.
  3.  Boil until steam starts to come out. Add the apple, quince and a piece of pineapple. Bring to a boil along with the corn.
  4.  Make sure the water has extracted all the purple pigment from the corn. The water level will also have dropped a little. Turn off the heat and let it cool.
  5.  Strain everything so that it remains pure juice and, once cold, prepare the chicha with lemon and sugar.
  6. Serve in a pitcher to accompany main courses.
Note: When acquiring purple corn, it is necessary that you choose corn that has a purple color inside. That is to say, split a corn in half to check if the corn is in good condition.
