Tortilla de huevo (Peruvian recipes)

The Tortilla is a quick and easy to prepare meal, we only need homemade ingredients such as: a fresh pickle, an egg, yuyo, and a medium onion. Nowadays it is prepared as a meal for the home, and it is mainly seen in many places in Peru. It should not be forgotten that the tortilla is a clear reflection of the diverse and homemade food for which Peru is known.

Its flavor is distinctly rich!

Tortilla de huevo (Peruvian recipes)

Ingredients:

  • 1 fresh escabeche and cut into small cubes.
  • ¼ of washed and cut in chiffonade (very small cut).
  • 1 medium sized onion cut in small cubes.
  • Vegetable oil.
  • 2 raw eggs.
  • Salt to taste.


Recipe procedure.

  1. On a bowl or a bowl, pour the contents of the egg and begin to beat, this can be done with a table spoon.
  2. After having beaten the eggs, start chopping the pickle and the onion in small cubes. Then add into the previous preparation.
  3. Before starting with the yuyo, we must wash it very well so that the remains of sand and other residues do not interfere in our tasting. Once this is done, proceed to chop it.
  4. Once everything is ready, begin to mix the preparation with a spoon, and let everything form a uniform mass, and separate.
  5. On a frying pan, add ¼ cup of oil, and let it heat enough to start frying the tortillas.
  6. When we start frying, we must make sure that the tortilla does not burn, and that they have a uniform texture (as in the photo).
  7. Once ready, serve with rice, vegetable stew and homemade fruit juice to make this meal unforgettable!

Beaten egg, ingredient.

Note: For frying use an apron, a spatula, and a container where you can leave each tortilla that comes out.
