A great Creole meal to try.

Pavita guisada is a typical Peruvian meal, prepared as a stew and seasoned with chili peppers. For this stew you need to opt for fresh and quality meat, where the turkey meat is chosen from free-range farming (many people raise their own turkeys), to obtain a better flavor. It is currently considered a creole food because it contains ingredients that make it stand out. And for a better presentation, it is usually accompanied by beans and rice. This meal is prepared as part of a recipe at home and can be found in various food stores!

Ingredients for the pavita guisada.

  • 1 kg of turkey meat cut into medium-sized pieces.
  • ¼ of frejol caballero (you must cook it previously).
  • Chopped cilantro in chiffonade cut.
  • 50 g of yellow chili bell pepper.
  • 20 grams of ground garlic.
  • 1 white vinegar.
  • 50 grams of red chili bell pepper.
  • Vegetable oil.
  • pepper.
  • cumin
  • Salt.

Procedure of the recipe.

  1. On a bowls or a medium bowl; add the yellow chili, the red chili and the ground garlic. And with a spoon begin to form a maceration, so that a single mass and a single preparation is formed.
  2. Once the preparation is ready; add a small amount of vinegar. And season with pepper, cumin, and salt to taste.
  3. Test the flavor, and let it rest for an hour (this time is so that the maceration begins to suck, and penetrate the meat); and during this time, we begin to cook our menestra for later use.
  4. Over a pot, prepare a basic dressing by adding oil, and 2 tablespoons of minced garlic. Sauté for 10 to 15 seconds, and carefully add the turkey breasts into the basic dressing (the breasts have already been previously marinated during the previous procedures).
  5. Cook over low heat, and watch from time to time. Do not forget to add a pinch of water when the stew starts to dry.
  6. Finish cooking when the prey is golden brown (as in the photo). And proceed to serve.
  7. When served, accompany it with rice and cooked beans (or you can choose the type of stew).
  8. Enjoy a good meal, accompanied by the people you admire and love the most!

Note: In procedure four, you will have to prepare another basic dressing for the cooking of the turkey meat. For this, the maceration that we have done previously has served us to enhance the flavor and improve it; so that our stew comes out rich and with a nice texture. Do not forget to add Umami seasoning to enhance the flavor in each dressing.
