The cancha serrana, or also called "cancha corn", is a snack prepared with roasted corn, and serves as an accompaniment to various meals. It is cooked by frying the corn in oil and seasoning it with salt, which is the key ingredient to make the cancha exquisite. Traditionally it is served with ceviche, to give a new presentation, or to improve the exquisiteness of this food, although it is also consumed on its own, and it is a great source of energy.

The cancha serrana, or also called "cancha corn"

Ingredients:

  • 500 g of cancha serrana corn.
  • Salt to taste.
  • 2 tablespoons of vegetable oil.

Recipe procedure.

  1. On a pot or frying pan, add 2 tablespoons of oil, and let it heat, then add a pinch of salt.
  2. Once hot, add the corn and stir continuously with a wooden spoon.
  3. Stir until the corn takes its cancha color, make sure it has a golden yellow color as shown in the photo.
  4. Cook until done, and turn off when the color of the corn has reached a "medium brown or yellow" color.
  5. Serve in typical dishes such as ceviche, or consume it for our day.
