Arroz a la cubana, is a very popular meal, which is known internationally for the ease of its preparation and the incorporation of its ingredients (which we can easily find); it is said that this meal can be prepared by anyone, without knowing anything about cooking, and it is the first meal that many people prepare, before starting in the world of gastronomy. In addition, it is a very quick meal to make, and it is considered an "emergency meal" for people who have little time. Its taste is rich.

Arroz a la cubana (Peruvian recipes)

Ingredients:

  • 4 chicken eggs and quality.
  • 4 fried plantains or island plantains.
  • 440 g of previously washed rice.

Recipe procedure.

  1. To wash the chosen rice, and to separate it on a suitable and comfortable container.
  2. On a pot, we prepare a basic dressing with vegetable oil and ground garlic, so that we can fry and make a good dressing.
  3. Once the dressing is sautéed, we add water (the amount should be the same as the amount used for the number of cups of rice), and let it boil until it is ready.
  4. On a separate space, heat vegetable oil, and add a pinch of salt (use a suitable and comfortable frying pan for this). We leave it at a low temperature so as not to overheat it.
  5. Once this is ready, we try to check the water of the rice if it is cooking; then we add the "washed rice" that has been done in procedure one.
  6. We let it boil with a low temperature; then we go on to peel and cut each plantain in half. So that we can fry it, and for each plantain take out two halves (see the photo of this recipe).
  7. When the frying oil is hot, place each plantain half on top of the oil and let it fry, making sure it does not burn. Turn from one side to the other to fry on both sides (use a long-handled wooden spoon to do this).
  8. Take it out when it is well fried, and let the oil it may contain drip off.
  9. Then we pass to the frying of the eggs; and we incorporate each one in its due place, and very slowly (we must try that the egg comes out whole and not disconformed).
  10. Fry properly, and then separate them in a separate dish.
  11. Observe that the rice is fully cooked, and serve.

Note: The first thing to fry is the plantain, since it has a soft texture, but at the same time it is weak in penetrating the smell of other ingredients that have been previously fried. That is why it is important to fry the plantain first, and then the eggs. For this you can heat oil again and fry each ingredient separately, but this is optional.
