The Varied Salad is a vegan meal that, unlike the Vegetable and Mayonnaise Salad, is a vegetarian recipe that incorporates vegetables such as: lettuce, carrots, onion, pickle (cucumber), and lemon juice. As its name indicates, it is a salad with a variety of vegetables that we can prepare for our daily diet. You can find the ingredients in a local market, and you should always choose the freshest ones.

Ingredients.
- One lettuce (fresh and washed).
- 3 carrots (fresh and shredded).
- One medium onion, cut into feathers.
- 250 g of fresh olives.
- 1 small cucumber.
- 2 small radishes and cut the tails.
- Olive oil.
- Salt to taste, or optional.
- Lemon juice.

Procedure of the recipe.
- Wash the ingredients that we have acquired in a local market, or a shopping mall. Many people think that buying in a mall is better; this will depend on the location, the distance between you and the ingredients; but do not forget to do a deep cleaning.
- On a bowl or salad bowl; cut the fresh lettuce into small pieces, and leave them on top of the bowl.
- Wash and peel the gherkins, carrots, radishes, and onion,
- Add the olives, and proceed to prepare with olive oil, lemon juice and salt to taste.
- Serve on plates or in the meals of your choice. Always move from one side to the other so that the juice takes consistency.

Note: Many times, there is confusion between Cucumber and Gherkin; in many geographical places cucumber is a fruit, and gherkin is a vegetable. In Peru, it is usually called gherkin.
