Ta-cu Ta-cu is a typical Peruvian dish, and one of the alternatives to combine between food from the previous day and new food. Its style is unique, and characteristic of many Peruvian foods such as: tamales and grilled chicken, this dish is prepared mainly by beans, pallares or seafood. Its preparation is the same that has been used for a long time, and today is preserved that gratitude in many Peruvian people.

Ingredients of the recipe.

  • One medium onion, diced and chopped into small squares.
  • 250 g of cooked canary beans (from the day before).
  • 10 grams of yellow chili bell pepper
  • 2 cups of cooked rice.
  • 10 grams of ground garlic.
  • Vegetable oil


Procedure of the recipe.

  1. With the help of a frying pan, we proceed to make a basic dressing by adding the chopped onion and the ground garlic. Brown for 20 seconds.
  2. Incorporate the cooked beans (this should be from the previous day), then move slightly from one side to the other. Let brown, until the dressing takes color together with the basic dressing.
  3. Then add the cooked rice, and with the help of a spoon, start stirring until the beans and rice are even.
  4. Integrate everything until a dough is formed.
  5. Remove the same pan, or with the help of another one, make another basic dressing, adding oil and yellow chili; and incorporate the previously made dough. And begin to mold.
  6. Serve with fried egg.
