Chicken stew is a typical Peruvian meal, prepared with chicken prey and stew. It is usually accompanied by a variety of vegetables such as carrots, peas, and tomatoes, this preparation gives it a better presentation and more flavor. It is currently served with rice, and is prepared as a traditional recipe, both for its ingredients and cooking style.

Ingredients:
- Umami seasoning (known as "AjĆ-no-moto" in Peru).
- 1 medium carrot (cut into small cubes).
- 1 medium onion (cut in small squares).
- 500 g of chicken meat (cut in small cubes).
- 1 tomato chopped in small cubes.
- 2 cups of rice (washed and cooked).
- 30 grams of fresh ground red chili bell pepper.
- 30 grams of fresh yellow chili bell pepper.
- 40 grams of freshly ground garlic.
- 1 cup of peeled peas.
Recipe procedure.
- On a frying pan, prepare a basic dressing; adding ¼ cup of oil, ground garlic, and the two fresh chili peppers. Fry it with a spoon at normal temperature.
- Once the dressing is ready, add the chopped tomato, onion and peeled peas. Then add a little water.
- Cook at normal temperature, taking care of the chicken. Immediately season with spices and Umami.
- Do not forget to taste the flavor for a better tasting, and cook at normal temperature, covering the pot.
- Once ready; appreciate the color, and texture to ensure its true cooking.
- Serve with rice, and decorate as desired.
- Accompany it with a fruit juice, and share it with your loved ones. Enjoy a great meal!
