Of Arequipa origin and delicious flavor. A very delicious Andean recipe for any important occasion.

Cuy Chactado, or simply called "fried guinea pig" is a delicious typical Peruvian dish prepared mainly south of Lima (Arequipa). Its preparation consists of frying a whole "cuy", macerated with chili peppers and cooking it in a traditional way (in firewood). It is believed that the more traditional the cooking is, the better its flavor will be! Nowadays, its presentation is diverse thanks to the numerous ingredients that are presented and it is served with wheat!

Cuy Chactado (Peruvian recipes)


Ingredients:

  • 2 whole guinea pigs (ready to fry).
  •  ½ kg of wheat (optional).
  •  ½ kg of yellow potato.
  • Half cup of red chili.
  • Half cup of yellow chili bell pepper.
  • Half cup of freshly ground garlic.
  • Vegetable oil.
  • White vinegar.


Procedure of the recipe.

  1. On a clean and comfortable dish add the red chili, yellow chili and ground garlic. Pour 20 ml of white vinegar. Add salt and seasoning.
  2.  Pour each guinea pig in the previously made maceration, bathe them completely, and let them rest. 
  3.  Then proceed to fry each guinea pig in very hot oil, and finish when it shows a dark crispy color.
  4.  To make the mashed potatoes parboil the "yellow potatoes", and then with a fork begin to mash (we must remove the skin) to form a "puree".
  5.  In a separate pot pour the "same mashed potatoes", and season adding yellow and red chili. Add a pinch of salt. Cook over medium heat, until a "perfect yellow" (as in the photo). And turn off.
  6.  Serve with onion salad, wheat, and mashed potatoes.

Note: You can accompany this meal with Chicha Morada juice and Huacatay cream. It will be delicious.
