Corvina a la Chorrillana (Peruvian recipe)

Recipe ingredients.

  • 1 kg of sea bass fillet.
  • Lemon juice squeezed from 2 lemons.
  • Oil in necessary quantity.
  • 6 cloves of garlic that can be ground.
  • 3 large onions, cut lengthwise.
  • 4 chopped tomatoes.
  • 2 yellow chili peppers in strips.
  • ½ tablespoon of chopped parsley.
  • 2 tablespoons of chopped coriander.
  • 6 tablespoons of white vinegar.
  • ½ cup of broth.
  • Boiled potatoes to accompany the meal.
  • Salt to taste.
  • Pepper to taste.

Recipe procedure.

  1. The first step is to cut the sea bass fillets in medium pieces and season with salt, pepper and lemon juice.  In a frying pan add oil and let them brown for 1 minute.
  2. Then, remove in a bowl and set aside.
  3. In a separate pot, prepare a dressing with a little oil, crushed garlic cloves, onion, tomatoes, aji amarillo in strips, aji panca, parsley and cilantro.
  4. Add the vinegar and the broth (this broth can be fish broth), and season with salt and pepper to taste.
  5. Add the sauce on top of the sea bass in the serving dish and accompany with browned potatoes.
  6. Serve on each occasion, and accompany with a special fruit juice.
