Corbatitas al gratin is a Peruvian gastronomic dish, and one of the least known dishes to people. Its preparation consists of cooking ingredients that we can find locally, and it has a fairly easy procedure. If this is the first time we are going to prepare this meal, we are going to love it. Corbatitas au gratin

Recipe ingredients.

  • ¼ kg of medium corbatita noodles (parboiled).
  • 125 grs margarine.
  • 2 spoonfuls of chopped onion.
  • 3 tablespoons of plain flour.
  • 1 ½ cups of milk.
  • 1 egg yolk.
  • 1 tablespoon of chopped parsley.
  • 1 teaspoon vinegar.
  • 150 grs mortadella.
  • 3 tablespoons of ground crackers.
  • 1 cup grated Parmesan cheese.
  • Salt.
  • Pepper.

Procedure of the recipe.

  1. Put the margarine in a pot, fry the onion, add the flour, milk, salt, pepper. Cook until it boils for one minute, season and remove from heat. Then add the egg yolk, lemon juice, wine, vinegar and parsley.
  2. Mix with the noodles and mortadella. Grease a rectangular mold and place in the preparation.  Sprinkle with crackers and parmesan cheese. Bake at 175 degrees centigrade (350 degrees ferenheit) for 30 minutes.
