Stuffed potato is a meal prepared with potatoes (the potato is mashed and stuffed with meat) and is served mainly in the evenings. Its preparation consists of mashing the potatoes that we have obtained ─we choose the potato known by Yungay ─ and then, we mash it so that we can make a mold with it; and just like tamales, we fill it with a dressing inside, and then we fry it.

Inside, we can incorporate a chopped onion, pickles, pieces of meat, and olives. And it is served with a cabbage salad prepared with lemon. Nowadays, this food is prepared for sale to the public, and can be seen in public places. The taste of this recipe is delicious!

Ingredients for the stuffed potato.

  • 1 kg of potato known as Yungay.
  • ¼ kg of Chinese onion chopped in small pieces.
  • ½ kg of chicken meat cut into small pieces.
  • 10 medium fresh olives.
  • 3 medium eggs (cooked and cut in half).
  • 3 fresh pickles, and cut into small strips.
  • Half a cabbage cut into thin slices.
  • 4 large lemons (for the cabbage salad).
  • 2 tablespoons of minced garlic.
  • Vegetable oil.
  • Salt to taste.

Procedure of the recipe.

  1.  On a clean and comfortable space; put to cook the potatoes, and in another separate pot the chicken meat, to reserve it and use it later. And before adding the potatoes inside the pot, we must wash them so that they are clean, and obtain a good cooking (this should be done if the potatoes are still clean, and in the same way it happens with the meat).
  2.  We let them cook over normal heat, and let the fire do its job.
  3.  While we wait for this to cook, we start with the chopping of the Chinese onion, and we do it in the form of a small cut (Brunoise cut style), the same way with the pickles, and the cabbage (we reserve this one in a separate container but full of water).
  4.  We observe if the potatoes have already been cooked, and make sure that they do not fall apart in small pieces, and once ready, we begin to peel them. In the same way with the chicken meat, and we reserve it to use it later (in the dressing that we are going to prepare previously).
  5.  We peel each potato and mash it (this is done with the help of a potato masher). And we reserve it inside a bowl, and with the help of our hands, we knead it from one side to the other, so that it is very thick.
  6.  On our frying pan, we prepare a basic dressing by adding: ground garlic, the chopped pickles, the Chinese onion and seasoning, the chicken meat and salt to taste. And we sauté until everything is soft and ready.
  7.  Once our mashed potatoes and dressing are ready, we make oval balls with the dough and leave a small hole in the middle to add the dressing we are going to prepare.
  8.  Inside each stuffed potato, we add a little of the dressing we have prepared. We also add the olives, and we add the egg cut in small halves (the egg, we cook it together with the cooking of the potatoes).
  9.  And once our stuffed potato is formed, we fry each potato, and take it out when it shows a golden color (as in the photo) and serve it with cabbage salad.
  10.  As always, accompany it with a delicious fruit drink. And make this meal unforgettable by sharing it with the people you love and admire the most in this life.

Note: We reserve the cabbage (from procedure three) in water, so that it does not oxidize and its texture does not spoil when exposed to the environment. In this way, we add water so that it does not have this problem. Or if we prefer, we store it in the refrigerator. Remember, once our stuffed potato is ready, this salad will serve to accompany it.
