Parrillada de res, is a traditional Peruvian meal, and cooked exclusively on Saturdays. Its preparation is made by means of a maceration that is left between one and two hours. This time allows the beef (cut in the form of fillets) to obtain a good flavor. In Peru, it is prepared with a party and cumbia music, and all the money collected from the sale of this food is destined to charity. Among the important ingredients are: beef, chili peppers, seasonings and vegetables. It is also accompanied by a refreshing drink.

Ingredients for the barbecue.

  • 1 kg of beef.
  • 50 cents of pepper.
  • 50 cents of cumin.
  • 50 cents of aji no moto.
  • 2 spoonfuls of ground garlic.
  • 2 spoonfuls of sillao.
  • 1 sol of red chili bell pepper special for barbecue.
  • 1 sol of dry yellow chili bell pepper.
  • ½ glass of coca cola.
  • 1 teaspoon of sugar tea (it will serve so that the meat does not reduce).
  • 1 kg of special potato for barbecue.
  • 4 lettuce leaves.
  • ¼ kg of beets.
  • ¼ kg of carrots.
  • Mayonnaise packaged to taste.
  • Special rocoto (rocoto with eggplant, huacatay or chilche).

Recipe procedure.

Preparation of the meat.

  •  In a bowl, add the pepper, the cumin, the ground garlic, the chilies, the sillao, the vinegar, salt to taste, the sugar, the coca cola, and the aji no moto.
  • Mix all the ingredients and make a mixture.
  •  On this mixture, add the beef, and let it macerate for a couple of hours, and leave it in the refrigerator.
  •  In a separate pot, boil the potatoes, the beets and the carrot together (cook the potatoes and the vegetables in different pots, so that the pigment of the beets does not stain the potatoes).
  •  Set the potatoes and vegetables aside and cut in half to serve later.
  •  In the same way, do the same with the lettuces, and prepare the rocoto with the eggplant to accompany, or you can also make a huacatay.

Cooking procedure.

  •  For the cooking of this meal, you need a grill. And for this, you will have to light the fire with charcoal, and let it heat up.
  •  Before proceeding to put the beef, you will have to spread the surface of the grill, with the same maceration that was done in procedure 1, and we leave the surface well wet, and we proceed to cook the beef prey.
  •  To do this, you will have to add the beef prey, and you will have to turn it quickly, so that the heat of the embers does not make the beef small, and in this way, the size of the prey is reduced.
  •  We can make a brush with the husk of a corn, and we use it to spread the maceration juice over the beef.
  •  Once cooked, accompany with potatoes, its beets, and carrot chopped in small pieces, its lettuce, and its beef.
 Additional. It can be served with slices of corn cut in slices.
