A Saturday’s dish.
Pollada is a typical food from Peru, principally known by the reason of its
preparation. The way it is prepared has constructed a whole tradition over the
years and it’s generally made on Saturdays.
Nowadays it’s generally prepared in large quantities to be sold and
collect money for a charitable cause in a society, family or organization.
It’s prepared with chicken and potatoes accompanied with vegetable salad
(beets and carrots cut in small dice). Its flavor is delicious.

Ingredients of Pollada.
- 2,2 lb. of chicken cut in pieces (generally quarters).
- 1,1 lb. of beets (cut in small dice).
- 1,1 lb. of Meril potatoes (Yungai)
- 1 medium size lettuce head.
- 1,75 oz. of Ajà amarillo (minced).
- 1,75 oz. of Ajà rojo (minced).
- 1,75 oz. of garlic (minced).
- Umami seasoning (Aji-no-moto).
- ¼ cup of soy sauce.
- ½ cup op white vinegar.
- Cumin.
- Pepper.
- Salt.

Procedure of recipe.
Time needed: 2 hours.

- Apply clean in the ingredients.
- In a clean platter, put the ajà rojo, ajà amarillo, the garlic and ½ cup of white vinegar (remember to use the necessary quantities for each preparation).
- Used umami seasoning.
- Add some Umami seasoning and move from one side to the other using a spoon to highlight its taste. Immediately, add the soy sauce.
- Season with salt if you want like.
- Season with salt, pepper and cumin to taste.Add the pieces of chicken to the platter and let it macerate for one hour.
- Make small cuts.
- Make small cuts in the chicken pieces to let the seasoning penetrate.
- Boil the potatoes.
- Boil the potatoes and cut them in slices (like in the photo). Same way, boil the carrots and the beets but cut them in small dice.
- Fry until the chicken.
- Once it’s ready, start frying the chicken to high fire.Fry until the chicken gets a golden roast color (like in the photo).
Serve accompanied the ingredients.
Serve accompanied of a lettuce leaf, slices of boiled potatoes, homemade
mayonnaise and huacatay cream.
