Ingredients of the patasca.

  • ½ kg (500 grams) of tripe cut into small pieces.
  • ½ kg of white potato cut into small cubes.
  • Chopped rosemary in chiffonade (small cut).
  • 1 ground or whole rocoto (to accompany).
  • 1 medium tomato chopped in squares.
  • 1 head onion chopped in cubes.
  • Chopped parsley in chiffonade.
  • A sprig of chopped coriander.
  • Sprigs of mint.
  • 1 kg (1000 grams) of soaked mote.
  • ½ kg of beef.
  • 1 tablespoon of oregano.
  • 1 teaspoon of pepper.
  • 1 teaspoon cumin.
  • Salt to taste.

Procedure of the patasca.

  1.  On a pot, add water until half, and on it; add the soaked mote, the beef in prey and the mondongo. Season with pepper, cumin and salt to taste. And let it cook over normal heat.
  2.  During its cooking, let everything cook, and stir with a spoon from one side to the other. At this time, add mint leaves, oregano and cover.
  3.  When the mote begins to burst (already at its eating point) lower the temperature to low heat; to slow down its cooking. During this action previously done; proceed to prepare a dressing, adding vegetable oil, chopped rosemary, chopped parsley, and brown it on a frying pan at normal temperature.
  4.  Sauté and brown well. And then, add this dressing to the pot where our patasca is cooked.
  5.  Also add the potato already cut, and add a few sprigs of coriander. And finally, taste and season to taste. Cook at normal temperature, and let everything is well cooked.
  6.  Taste accompanied by chopped Chinese onion, chopped chili, and if possible, bread (this is optional).
