Chicharrón de Atún (Peruvian Recipe)

Recipe ingredients.

  • One kilogram of fresh tuna.
  • Half a cup of vinegar.
  • A quarter cup of Sillao.
  • Half cup of pisco.
  • 4 cloves of chopped garlic.
  • A spoonful of yellow chili bell pepper.
  • 4 spoonfuls of chuño.
  • Oil for frying.
  • Salt.
  • Pepper and cumin.

Procedure of the recipe.

  1. Mix vinegar, Sillao, pisco, garlic, aji amarillo, chuño, salt, pepper and cumin in a bowl. This is used to macerate the tuna.
  2. We cut each tuna, lengthwise in 3 centimeters, and macerate for half an hour. The maceration time is important, since it allows it to take flavor.
  3. After this time, in a frying pan with plenty of oil, fry the pieces of tuna a few at a time.
  4. It is good to use a kitchen spatula to turn each piece and make sure they are well browned.
  5. Serve with creole sauce, yucca and rocoto cream.

Note: The tuna chicharrón can also be served with parboiled corn.
