Ingredients:

  • ½ kg of small shells (to garnish the dish and make edible).
  • 2 medium onions, diced into small cubes.
  • 100 grams of ground coriander.
  • Peeled and fresh peas (to add to the rice).
  • ½ kilo of squid cut in small dices.
  • One large tomato, cut in half.
  • ½ kilo of mussels, this is optional.
  • ½ kilo of clams, fresh and washed inside.
  • 2 peppers cut in long and small strips.
  • 2 cups of selected and washed rice.
  • Fresh ground garlic.

Procedure of the rice with seafood.

  1. On a clean and comfortable container; to begin to wash, and then to boil the seafood for a limited time (this will have to last from 2, to 5 minutes so that it does not lose its properties).
  2. In a separate pot, prepare a basic dressing and add: vegetable oil, onion, a spoonful of ground garlic, yellow chili bell pepper, chopped tomato, pepper and salt to taste. Brown for approximately 30 seconds.
  3. Verify that our dressing has a good smell, and is at its point. Then we add ground coriander, and move from one side to the other, so that it can be mixed, and a single dressing is formed.
  4. Keep watching. Once our dressing is ready; we add two cups of water, and the variety of seafood we have prepared, in procedure one.
  5. We let it cook over normal heat, and then we add the "peeled peas", the bell pepper, and let it cook, over low heat.
  6. We move from one side to the other, and finish, when it is ready. After this, we proceed to serve, and decorate in a creative way.
  7. Serve with aji limo chili and some fruit juice (chicha morada, passion fruit or pineapple juice).
  8. Enjoy a good meal, in the company of those you love the most!
