• 10 fresh and squeezed lemons (choose the best).
• Umami seasoning (in Peru as Ají-no-moto).
• 10 medium sized fresh pickles.
• 2-4 tablespoons of freshly ground garlic.
• 2 ají limos cut in half.
• Pepper (this is optional).

1. On a chopping board; cut the fish into small fillets. And reserve it for later use (keep it inside a covered refrigerator).
2. After this; we begin to split each pickled chili, and we remove its seeds and all the contour that surrounds it. And proceed to wash.
3. Once ready; we take the pitcher of our blender, and add the escabeches; and next to it, the squeezed lemon juice (calculate the necessary amount for the preparation), the chili limes (if we want it to be hot), and we season it with Umami, and salt to taste.
4. And proceed to blend. This should be done for about 30 seconds approx.
