Grilled chicken is a typical Peruvian meal, prepared with chicken meat, and cooked inside an oven. The cooking consists of an oven that burns with "coal", and the chicken is introduced inside in such a way that it is moved with a rotating mechanism. The grilled chicken is served with French fries, lettuce salad, and accompanied by peppers, which give it a rich flavor. In addition, it is a meal that is only prepared at night.

Ingredients for grilled chicken.

  • 1 whole chicken of medium size and fresh (but clean inside).
  • ½ cup (118.29 grams) fresh red bell pepper.
  • ½ cup (118.29) fresh ground garlic.
  • ½ cup (118.29) fresh yellow bell pepper.
  • 500 ml (16 fl oz) white vinegar or a "bottle" of this vinegar.
  • ½ cup (118.29 ml) Sillao or soy sauce.
  • 10 tablespoons (150 grams) of Cumin.
  • 10 spoonfuls (150 grams) of Pepper.
  • 1 cup of Salt or to the taste.

Recipe procedure.

  1. On a medium and comfortable dish; place the whole chicken and let it rest (remember that the chicken must be clean and the vespers removed).
  2. Over a cup of water add 2 tablespoons of salt and dissolve. And carefully pour it over the whole chicken (salt is an important element in the preparation of this recipe, for that reason salt is the most added ingredient in this preparation).
  3. For a better flavor grip; proceed to chop with a knife the chicken parts and open openings. Just as if it was for a baked turkey, and then we let it marinate for an hour.
  4. In that same time take advantage and prepare a maceration adding yellow bell pepper, red bell pepper, ground garlic, Sillao and vinegar (add the necessary amount).
  5. Dissolve with a spoon and make a single mixture and season with cumin, pepper and salt all to taste. In this "section" we should try the flavor and leave it at its point.
  6. After the expected time; add the prepared maceration over the chicken and let it take consistency. And let it rest for another hour.
  7. And finally, introduce the macerated chicken into an instrument where it turns randomly, and is under the heat of the embers (this oven is lit by the use of the charcoal that is taken from the trees). And let it cook until a golden color texture is achieved (see the texture in the photo).
  8. Serve with salad and French fries. And of the people who are part of your life.

Note: When water with salt is added it makes the chicken meat taste and grip in its flavor and texture.
