Lomo saltado, is a typical food from Peru, preprared with beef, and French fries. Its preparation, consists on stir frying the beef, in a pan using the fire warm, until it gets smoked. This process, is used to get a more exquisite flavor, and a more excellent texture. Nowadays, you can see many way, of preparing a Lomo saltado. We can also, incorporate our own ingredients, since it’s a really flexible dish. Not forgetting, that it has a really delicious taste!

Ingredients of the recipe.

  • 2.2 pounds of beef cut into small cubes.
  • 1.1 pounds of yellow potatoes (yellow potato) cut in thin slices (batonnet).
  • 3 medium onions, sliced.
  • 2 tablespoons vegetable oil.
  • 1 teaspoon of chopped garlic.
  • Umami seasoning (known in Peru as "Ají-no-moto").
  • 1 tablespoon soy sauce.
  • 2 - 3 tablespoons of white vinegar.
  • Pepper.
  • Cumin.
  • Salt.

Procedure of the recipe.

  1. Cut the beef, in small dice over a wood, cutting board and wash it carefully.
  2.  Same way, peel and cut the potatoes in thin slices (batonnet) over the cutting board (just like French fries, for Pollo a la brasa).
  3.  In a medium size bowl, season the beef dice with Umami seasoning, cumin, pepper and salt to taste. Add also the tablespoons of soy sauce, and vinegar.
  4.  Once seasoned, warm a pan to a regular temperature, and add two tablespoons of vegetable oil.
  5.  Once it’s warmed, add a teaspoon of minced garlic, and the sliced onions to the pan.
  6. After one minute, add the diced meat and sweet potato fries.
  7. Sauté, at normal temperature until done.
  8.  Serve accompanied, with rice and fruit juice.
